… i saw this recipe in Real Simple last month… and considering my love of pumpkin AND baking, it was obviously a match made in heaven…
… plus the fact that I had the perfect excuse to make cupcakes, as my friend and I were hosting Ghoul’s Night (get it– Girl’s Night)…
… aaaaaand the minor detail that i was supposed to be doing homework… but anyways, CUPCAKES…
… they were super easy and super yummy... not overwhelmingly pumpkin-y… but definitely fall flavored…

… Necessities…
1 box of Cake Mix- (The Magazine recommends Yellow Cake mix- I used French Vanilla- and I’d like to try it with Spice Cake)
Ingredients required on Cake Box
1/2 tsp. Pumpkin Pie Mix
1 15 oz Can Pumpkin Purree
… preheat oven to 350… prepare cake mix as directed on box with the following substitutions: add the pumpkin pie spice and pumpkin puree INSTEAD of the water… divide batter into cupcake cups and bake for 18-20 minutes until a toothpick or knife inserted comes out clean…
… like i said… SUPER EASY…
… we made the powdered sugar frosting posted here rather than the cream cheese frosting described in the magazine… but that one sounded good as well… another day i suppose…
… we also used the frosting decorated pro mentioned in the post linked above to make clean cupcake tops… to which we added black, orange, and purple sprinkles… and of course, candy corn PUMPKINS…
… so if you’re planning to party this weekend… or just looking for something seasonally appropriate… i’d say this is the perfect treat…
