…thus, in reality… most of the recipes you find on my blog… will use ingredients you keep on hand… can be accomplished in 5 steps or less… or are only partially HOMEMADE…
… this is also the reason i am a HUGE beyond HUGE fan of the croc-pot… BIG portions… LITTLE effort…
… chicken tacos… in the croc-pot… is, without question, the EASIEST meal (that looks and tastes like it took hours of effort!)…
Ingredients:
Chicken Breasts (1 good sized breast for every 2 people)
1 Large container salsa (i am a sissy who sticks with mild… but you decide…)

…Place a couple of breasts in the bottom of the croc… pour salsa over chicken… lay another layer of breasts… then cover that layer in salsa… continue this until all of the breasts have been placed in the croc and covered in at least a little layer of salsa… turn on the croc-pot… walk away… and wait for the savory smelling magic…
… For 8-12 breasts… i place the croc on low and let them slow-cook for about 8 hours… or on high and let them cook for about 5 hours… the ckicken will be SO tender after this time you can take two forks and start to shred the chicken as you pull it from the croc… it will literally fall apart…
… Pick up some tortillas… cheese… beans… rice… sour cream… guacamole… whatever condiments scream tacos… and HELLO DINNER… done and done…
… i have made the meal for 2 and frozen the leftovers to enjoy when life doesn’t lend time to cook… taken the dish for work pot lucks… made it for friends just home from the hospital with a sweet baby boy to attend to rather than hang out in the kitchen… and even lugged my croc-pot on cabin trips… because honestly… after a day of sledding, skiing, or wake-boarding… there is NOTHING better than a house that smells of home-cooked nourishment and a dinner that’s WARM and READY…
